Pak Choi is also known as Bok Choy or Chinese cabbage (Brassica rapa), and is grown for both its stalks and leaves. This cruciferous vegetable has a very mild, sweet flavor that shines in Asian dishes and stir-fry. A member of the brassica family, Pak Choi does well when sown in Spring or Fall. Start indoors about 4 weeks before the last frost and transplant outdoors when soil temperature reaches 50 degrees. Use plenty of organic fertilizer for tasty cabbage heads. Standard seed packet contains 750 mg (about 320 seeds). Jumbo packet contains 3 g (about 1,200 seeds).
Small, compact growth habit reaching 4-5 inches. Harvest baby pak choi leaves in just 30 days, or wait for the full heads to form in about 60 days. Large, premium seed packets give instructions on how to grow and when to plant outdoors.
Can be grown in spring or fall. Start plants indoors under light or sow directly into the garden. Plant in fertile, well-draining soil and keep consistently moist. Harvest the entire head at once or individual leaves from the outside for a prolonged harvest.
