Fresh Herb Bone Broth Recipe for the Instant Pot

Chicken Bone Broth with Fresh Herbs

Fresh herbs add essential flavor and nutrients to broth that you just can't get anywhere else.
For this reason, I always have herbs like rosemary, thyme, and sage growing indoors in the winter!
I make my broth in an Instant Pot. I find it easier and much faster than on the stove. Here's the recipe I made after looking at several options and choosing my favorite herbs and vegetables.
Ingredients
Bones from 1 Rotisserie Chicken
4 to 5 Medium Carrots - washed & cut in half (don't have to be peeled)
3 to 4 Celery ribs - cut into chunks
1 Large Onion - cut into chunks
3 to 6 Cloves Garlic - chopped
2 Tbsp Apple Cider Vinegar
1 tsp. Salt
Pepper to taste

Water - enough to cover about 3/4 of chicken & vegetables
Directions
Put all ingredients in the Instant Pot.
Put the lid on and turn the pressure valve to “seal” or “closed.”
Set the Instant Pot to low pressure and set the time for 240 minutes. Run this cycle 3 times. Start in the morning so you can restart it throughout the day.
Let the Instant Pot depressurize and cool off when the last cycle is complete.
Allow the liquid to cool, and then pour through a strainer.

Storing Bone Broth
Store bone broth in the refrigerator to use within 5 days. For longer storage, freeze for up to 12 months.
