Black Beauty Eggplant (Solanum melongena) is a popular heirloom variety of eggplant with large, glossy fruits that average 2lbs! The large dark purple eggplants have the classic bell shape. Eggplant is a close relative to tomatoes and potatoes and will be a prolific producer all season. Seed packet contains 400 MG (about 100 seeds).
Roasted with olive oil, grilled, breaded and fried crispy, creamy eggplant and feta dip, or the classic Eggplant Parmesan, are all delicious ways to enjoy this healthy vegetable. Large, premium seed packets give instructions on how to grow and when to plant outdoors.
Start seeds indoors 8-12 weeks before last frost. Sow seeds into flats and transplant to cells after first true leaves emerge. Harden off plants for a week before transplanting outside when daytime temperatures reach 65°. Keep soil consistently moist throughout growing season.
