Double Chocolate Zucchini Brownie Recipe

Zucchini is a secret ingredient in baked goods. It adds texture and moisture without changing the flavor. It pairs well with chocolate in this decadent brownie recipe.

Double Chocolate Zucchini Brownies

This recipe doesn't skimp on fresh zucchini! You can use 3 whole cups. Don't worry about pressing out the moisture. The natural juices will bake into the flour and sugar to create a chewy cocoa flavor. 


You'll be surprised how easy and quick these are to make.

Ingredients

  • 1/2 cup melted butter
  • 1 cup granulated sugar
  • 1 tablespoon vanilla
  • 1/2 cup cocoa powder
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsps baking soda
  • 1 tsp salt
  • 3 cups finely shredded zucchini
  • 3/4 cup semi-sweet chocolate chips

Directions

Step 1

Preheat oven to 350ºF. Prepare a 9x13 glass baking pan with baking spray or vegetable grease. 

Step 2

In a mixing bowl, combine melted butter, sugar, and vanilla. 

Step 3

In a large bowl, mix flour, cocoa, baking soda, and salt. Add the wet butter mixture. 

Step 4

Stir in the zucchini. The batter may still be very dry. Let it sit for 5 minutes and then stir again. This gives the zucchini time to release some moisture. 

Step 5

Add chocolate chips. The batter should be moister. Allow it to sit, and stir again if needed to mix in any dry clumps.

Step 6

Spread the brownie mixture into the pan. Bake for 25 to 35 minutes. Check with a toothpick in the middle.

Zucchini Tips:

You can use any variety of zucchini. 

Younger squash will have more moisture. 

When using older squash, you may want to discard the seeds.

Allowing the batter extra time to sit makes it easier to stir.

Zucchini makes these very moist. Use a longer bake time for a firmer brownie.
