Copenhagen Market Cabbage (Brassica oleracea) is a quick-to-mature Danish heirloom that produces large, round heads that weigh 3-4 pounds. This compact variety produces beautiful blue-green leaves that are rich in nutrients and are delicious raw or cooked. It also stores beautifully for up to 6 months and resists splitting. Standard seed packet contains 750 mg (about 225 seeds). Jumbo packet contains 4 g (about 1,100 seeds).
Copenhagen Market Cabbage makes wonderful coleslaw and salads, or it can be cooked and added to skillet dishes, casseroles, soups and stuffed. Large, premium seed packets give instructions on how to grow and when to plant outdoors.
Sow indoors in cell flats 6-8 weeks before last frost date. Keep soil temperature above 70° until germination. Transplant seedlings outdoors 2-4 weeks before last frost date. Cabbage prefers cooler growing temperatures and may sunburn in hot weather.
