Red Garnet Amaranth (Amaranthus) is a stunning plant that can reach 6’ or more and produces edible leaves and magenta seed heads that can be eaten or left to feed goldfinches and other wildlife. It is lovely in flower beds or your vegetable garden! Seed packet contains 1 G (about 1300 seeds).
Young leaves can be harvested and eaten as greens, and the seeds heads can be toasted and eaten as a grain. This prolific vegetable can also be a gorgeous addition to cut flower arrangements. Large, premium seed packets give instructions on how to grow and when to plant outdoors.
Start 6-8 weeks before last frost date, or direct seed outside after all danger of frost is past. Keep seedlings and transplants evenly moist but not overly wet. Set out in a sunny spot with fertile, well-drained soil. Harvest seed heads once they begin to brown. Cut and place in paper bag to dry completely. Shake bag to separate grain.
