Purple Romagna Artichoke (Cynara scolymus) is a unique variety of artichoke that produces large-hearted heads primarily in purple, although a few green heads may appear. Light harvest is possible in the fall of the first year but the harvest will be more reliable in two to five years. If buds are uncut, they will open into a beautiful thistle-like lavender-colored flower.
