Spaghetti squash (Cucurbita pepo) has uniquely textured, stringy flesh with a neutral flavor that pairs well with sauces. Vines typically produce many 3-4 pound fruits. Stores exceptionally well, thanks to its hard yellow rind.

Plant directly outside after last frost date, or start indoors 3-4 weeks ahead of time. Sow in an area with full sun and rich, fertile soil. Thin each hill to 2 strongest plants. Usually planted in mounds but can be trained on a trellis to save space.
